The Bourgogne Côte d’Or Chardonnay by François Carillon is a still white wine with a bright and exuberant profile, capable of delivering a full and linear sip. Where it comes from

This Bourgogne Côte d’Or originates in Burgundy from plots covering five hectares, spread between the communes of Puligny-Montrachet and Meursault. The grapes come from old vines aged between thirty-three and fifty-nine years, whose roots delve into rich clay-limestone soils. This precious interaction between soil and vine maturity gives the wine a marked definition. The territorial imprint ensures the white wine expresses itself with a focus on acidic tension, precisely reflecting the region’s identity.

How it is produced

Production begins with a careful manual harvest, followed by vinification in oak barrels, where both alcoholic and malolactic fermentation take place. Maturation continues for about a year in the barrels, accompanied by gentle stirring of the lees to encourage structural integration without clouding the fruit’s purity. Afterwards, the wine rests for two months in tank to complete the harmonisation phase. These steps result in a glass with defined balance, maintaining its aromatic vibrancy intact.

The François Carillon Domaine, created in 2010, is the long-lasting legacy of a wine family business that dates back to the 16th century in Puligny-Montrachet, a very typical wine village in south of Côte de Beaune - Burgundy’s most renown terroir for white wines.

Located in the heart of the village, the estate owns and manages today a sixteen-hectare-vineyard located in Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin. The estate produces about seventeen (depending on the harvests) different appellations, mainly in Chardonnay.

Between passion and precision, the ambition of the François Carillon Domaine is to produce fine, elegant and gourmet wines, representative of the exceptional terroirs from which they come.
