Where it comes from
The roots of this sparkling wine lie in the renowned territories of Friuli-Venezia Giulia, a region that imparts a clear territorial character to the wine. The vineyards grow on gravelly soil, characterised by a significant percentage of marl sandstone and alluvial sediments. This highly draining composition encourages a clean and direct aromatic expression, maximising the qualities of the raw material. The pedoclimatic environment supports the unmistakable aromatic clarity of the grapes, allowing the original aromas to remain vibrant and the overall elegance to stand out.
How it is produced
The grapes are harvested at perfect ripeness, then gently destemmed and softly pressed. Vinification takes place in stainless steel, followed by the prise de mousse in autoclave according to the Charmat method, which is essential for the development of the effervescence. Finally, dealcoholisation at room temperature takes place, a meticulous process designed to separate the alcoholic component.
