Description

What kind of wine is it

Fontanasanta Manzoni Bianco by Foradori is an organic white wine from Trentino (Vigneti delle Dolomiti), vinified with skin maceration in cement tanks. Made from Manzoni Bianco grapes, a cross between Riesling Renano and Pinot Bianco, it offers clear aromas of dried apple, peach and mango on the nose. On the palate, it displays a full body, maintaining perfect balance thanks to a pronounced mineral streak, revealing itself as a white wine capable of evolving over time.

Where does it come from

This wine originates from Fontanasanta, a vineyard located on the hills overlooking Trento. The vines sink their roots into clay-limestone soils, a typical feature of the mountain environment that gives the wine a taut and defined flavour profile. The area's microclimate encourages a slow and gradual ripening of the grapes, culminating in a harvest at the end of September. The hillside origin and the particular soil composition define a profile marked by aromatic precision and a distinct saline sensation.

How is it produced

Vinification involves fermentation with skin maceration in cement vats, a technique that enhances the complexity of the must. Afterwards, the wine matures in acacia barrels, a choice aimed at supporting natural evolution without overpowering the fruit's fragrance. Bottled without filtration to preserve its integrity and aromatic depth, it stands out for its harmony and structure. Thanks to its savoury finish, it is ideal paired with sushi and lean fish, but also perfectly complements vegetarian dishes, delicate first courses and soft cheeses.

History and Curiosities

The Fontanasanta Manzoni Bianco 2025 by Elisabetta Foradori captures the authentic essence of the Trentino hills. This organic wine, born on clay-limestone soils, expresses a complex and fascinating harmony thanks to skin maceration in cement vats and the absence of filtration. The subsequent ageing in acacia barrels consolidates its profound structure. Boasting remarkable ageing potential, it is an extraordinary white wine that requires patience: it will reveal its fullest expression two or three years after the harvest.

Our awareness of nature’s rhythms and cycles has been perfected through observation over time: each season opens new horizons, every day we learn and understand a little more. We have learned to pay attention, to grasp the subtle differences existing in nature and to preserve the true character of the grape in the expression of its land of origin. Our daily farming gestures are elevated to creative impulses: it is our duty and privilege to wake up every morning and to be free to work according to the message that the earth conveys to us in that moment.

We harvest the grapes from vineyards covering 29 hectares – 70% of Teroldego, 15% of Manzoni Bianco, 5% of Nosiola and 10% of Pinot Grigio – to produce an average of 180.000 bottles per year: 50.000 of Foradori, 20.000 of Granato, 20.000 of Fontanasanta Manzoni Bianco, 10.000 of Fontanasanta Nosiola, 10.000 of Fuoripista Pinot Grigio, 10.000 for each vineyards of Sgarzon and Morei and 50.000 bottles of Lezèr.
