Where it comes from
This Sangiovese originates in the territory of Panzano in Chianti, within the Colli della Toscana Centrale area. The grapes come from a rigorous selection of the best Fontodi vineyards, cultivated using the Guyot system. The unique terroir gives the wine a solid structure and an aromatic profile focused on ripe fruit. The particular environmental conditions of the area are reflected in an austere and absolutely precise sip, capable of fully expressing the territorial identity combined with a pronounced mineral imprint.
How it is produced
Production begins with a spontaneous fermentation carried out by indigenous yeasts. Maceration takes place in temperature-controlled steel tanks for at least three weeks, ensuring optimal extraction thanks to constant punching down. After malolactic fermentation in wood, the wine matures for twenty-four months in French oak barrels from the Tronçais and Allier forests. This long ageing process consolidates the tannic definition, giving depth of flavour and remarkable persistence on the palate.

Fontodi is a certified organic farm and covers 170 hectares, of which more than 80 are planted with vines. The principles of naturalness and sustainability inspire the agriculture that is practised: not only are no synthetic chemical products used, but an attempt is made to make the most of the company's internal resources by reducing external inputs. For example, the vineyards are fertilised using compost produced by combining pruning residues and manure from the farm's own Chianina breeding.
