Where it comes from
This wine originates in Sicily, along the coastal strip of Petrosino, where the influence of the sea constantly shapes the local microclimate. Mild winters and hot, dry summers characterise a region with siliceous, low-fertility soils rich in red earth, lying above a shallow water table. Florio's commitment in this area is reflected in a rigorous organic approach. The marine environment and controlled natural oxygenation are the key elements that define the identity of this intense Marsala.
How it is produced
After the vinification of the Grillo grapes, the production process relies on the Solera Method to develop extraordinary complexity. The lengthy ageing, which can range from fifteen to thirty years, takes place in partially filled barrels, encouraging a slow blend between different vintages. A final rest of at least six months allows for perfect stabilisation of the structure. Served at 10-12 °C, it pairs harmoniously with blue cheeses, structured starters and elaborate desserts, while also proving to be an excellent meditation wine.
