Description
What type of wine it is
Fina Grillo Firma del Tempo Riserva from Cantine Fina is a still white wine with a distinctly Mediterranean character. Crafted entirely from Grillo grapes in the Sicily region, this wine stands out for its citrusy and floral aromatic profile. It is a structured and complex expression, characterised by a marked sapidity and elegant hints of aromatic herbs. The winemaking process involves partial fermentation in wood and prolonged ageing on the fine lees, giving great depth to every sip, ideal for masterfully accompanying shellfish dishes, delicate fish, or white meats.
Where it comes from
The grapes destined for this label come from a single vineyard located at sea level, within the evocative Stagnone Nature Reserve, in the western part of Sicily. This particular coastal location gives the wine unmistakable iodised and saline characteristics, making it an authentic expression of the maritime terroir. The vines, trained using the Guyot system, are grown with very low yields to ensure an extraordinary aromatic concentration. The microclimate of this specific area shapes a fresh and dynamic flavour profile, where the proximity to the sea becomes the crucial element in defining its precise and fascinating territorial identity.
How it is produced
Production begins in the first ten days of September with the harvest, followed by destemming, crushing, and soft pressing. The must is clarified through static sedimentation before starting fermentation at a strictly controlled temperature. A portion of the mass ferments in new barrels, giving the liquid greater structural roundness. Subsequently, the wine undergoes slow and careful maturation on the fine lees, supported by the practice of bâtonnage, for a period of about twelve months. The process is completed with a further rest in the bottle for two months, an essential step to perfectly integrate the components.
History and Curiosities
The Fina Grillo Firma del Tempo Riserva 2023 comes from a single vineyard located right at sea level within the evocative Stagnone Nature Reserve, in beautiful western Sicily. This unique positioning gives the wine characteristic iodised and saline notes, making it evocative of the Sicilian sea and its summer breezes. Cantine Fina cultivate this vineyard with very low yields of only 300 plants per hectare, subsequently ageing the wine on its fine lees for 12 months.
