Le Oche by Fattoria San Lorenzo is a still white wine with Indicazione Geografica Tipica from the Marche region, produced with Verdicchio grapes. It stands out for its aromatic profile centred on intense fruity and floral notes, a result of spontaneous fermentation and ageing in cement tanks. On the palate, it is soft, balanced and persistent.
How it is produced
The harvest takes place in mid-October, followed by spontaneous fermentation started by indigenous yeasts. The wine matures for twelve months in cement tanks in contact with its lees, a fundamental step to enrich its structure. The process concludes with a six-month bottle ageing, which stabilises the aromatic profile and ensures the final structural balance.
