What kind of wine it is
Campo delle Oche Aged 36 Months on Its Own Lees is a still white wine of great structure, made exclusively from Verdicchio grapes. In the glass, it appears straw yellow adorned with bright golden highlights. The bouquet reveals clear notes of ripe fruit, chamomile and hay, enriched by elegant nuances of honey and saffron. On the palate, it is structured and savoury, supported by remarkable persistence on the finish.
Where it comes from
This wine originates in Montecarotto, representing a faithful expression of the Marche region. The Fattoria San Lorenzo winery follows an organic farming approach, aimed at preserving the natural fertility of the soils. The wine is the result of rigorous work focused on enhancing the most authentic varietal expression, favouring natural processes to highlight the identity of the place.
How it is produced
Production begins with a strict selection of bunches harvested at the end of October, followed by gentle pressing. Fermentation starts spontaneously thanks to the action of indigenous yeasts. Ageing continues for thirty-six months on the fermentation lees, divided between cement vats and steel. This long maturation ensures remarkable longevity, making it ideal for accompanying elaborate fish dishes and selections of mature cheeses.
