Where it comes from
The grapes are grown in the surroundings of Sovana, in the Tuscan countryside, in an area with a profound geological footprint. The vineyards are located at approximately two hundred metres above sea level, on slopes and plains. The distinctive element is the soil of volcanic origin, characterised by a subsoil of tuffaceous rock. These soil and climate conditions shape the fruit and infuse the wine with a marked savoury identity.
How it is produced
Production begins with a hand harvest aimed at protecting the aromatic integrity of the Aleatico. After destemming and soft pressing, the must undergoes a short cold maceration, essential for extracting colour and aromas. Fermentation takes place in stainless steel tanks at a controlled temperature. Ageing on its own lees until bottling enhances its pleasantness and gustatory continuity.
