What kind of wine is it
Champagne Etienne Sandrin À Travers Celles Extra Brut combines Chardonnay and Pinot Noir in a blend that reflects the identity of the region. In the glass, it shines with a crystalline golden yellow colour, enlivened by a fine and persistent perlage. Produced according to the Traditional Method, it offers fragrant aromas of fresh fruit and white flowers, with a pronounced note of linden. On the palate, it reveals a mineral and spicy texture, finishing with a dry and clean aftertaste, perfect alongside raw seafood, shellfish or a refined red prawn carpaccio.
Where does it come from
The name of the cuvée pays tribute to the plots that cross the village of Celles-sur-Ource. The grapes grow on well-ventilated plots such as Mouille-Brant, Vieux Moulin and Grille Besace, which benefit from complementary sun exposures. The vineyards of Etienne Sandrin are managed according to biodynamic viticulture practices, safeguarding the health and vitality of the soil. Such artisanal dedication ensures a limited production of remarkable elegance, capable of faithfully conveying the truest essence of the Champagne region.
How is it produced
The work in the cellar enhances the freshness of the musts through separate vinification of the grapes. By avoiding the use of barrels, a clear and transparent evolution of the aromas is ensured. The prise de mousse, carried out strictly using the Traditional Method, shapes a sharp and profound wine. The choice of an Extra Brut dosage accentuates the purity of the structure, leaving almost imperceptible bubbles on the palate. A serving temperature between six and eight degrees is ideal to savour every single aromatic nuance.

The Champagne A Travers Celles Extra Brut by Etienne Sandrin owes its name to the plots located in the village of Celles-sur-Ource. The result of pure biodynamic viticulture, this wine expresses the authenticity of the region through artisanal production with minimal intervention, without any ageing in wood or added sugars. The grapes from the Mouille-Brant, Vieux Moulin and Grille Besace vineyards are vinified separately for a limited production of around 10,000 bottles. The absence of reserve wines makes it an elegant, undeclared vintage.

From 2006 to 2013 they always sold the grapes improving, year after year, the cultivation systems of the vines until, in 2013, they started in a very conscious way, the biological conversion and, the following year, the biodynamic one.
They have 10ha of vines divided into 80% Pinot Noir, 20% Pinot Blanc, Chardonnay is in almost ridiculous amounts (0.2 ha), but they only work in quantities to get 10,000 bottles. The rest is still partly sold and partly kept in tanks for the production of the next cuvée.
There are 12 parcels of which the grapes are harvested and which, year after year, will be vinified separately to give rise to new wines.
They do not use wood, they do not use sugar and, in general, nothing that could change the taste of bottled grapes. In this they are very radical.
It's not all roses and flowers because, as Anne says, if you want to make serious biodynamics you're seriously penalized.
