What kind of wine is it

Échappée Belle by Etienne Calsac is a Champagne Blanc de Blancs Extra Brut made from Chardonnay grapes and produced using the Traditional Method. The straw-yellow glass with golden highlights is enlivened by a fine and persistent perlage. On the nose, it releases aromas of citrus, green apple and exotic fruit, accompanied by clear mineral notes. On the palate, it is decidedly dry and savoury, with a dynamic finish that is ideal for pairing with shellfish, lean fish, sushi and mature cheeses.

Where does it come from

The grapes come from vineyards located between the Côte des Blancs, the Côte de Sézanne and the Grande Vallée de la Marne, in the heart of Champagne. The clay-limestone soils of these areas give the grapes remarkable expressive energy. This particular geological matrix ensures a taut structure and a profound mineral imprint. Such characteristics outline a linear flavour profile, a faithful expression of the territory of origin.

How is it produced

The vinification process involves spontaneous fermentations carried out by indigenous yeasts and continues with malolactic fermentation. The creation of the blend benefits from the structural contribution of reserve wines. Maturation takes place between oak barrels and stainless steel tanks, without filtration or fining to preserve the integrity of the raw material. The low residual sugar defines the dry and rigorous character of the Extra Brut dosage.
