Where it comes from
The Müller Thurgau grapes thrive in Caldaro, immersed in the temperate climate of South Tyrol. The vineyards are cultivated using the traditional pergola system at an altitude between 550 and 650 metres, benefiting from optimal eastern exposure. The gravelly and calcareous soils give the wine a crisp profile and pronounced savouriness. The Erste + Neue winery operates with deep respect for the mountain environment, adopting sustainable practices to protect the local biodiversity and the surrounding ecosystem.
How it is produced
Production begins with the manual harvesting of the bunches and a careful selection of the best fruit. Fermentation takes place in stainless steel tanks at a controlled temperature, keeping the must in total protection from oxygen: a fundamental technique to preserve the aromatic finesse of Müller Thurgau. The subsequent ageing on fine lees, always carried out in steel, enriches the wine’s complexity and balances its flavour. This meticulous process enhances the purity of the fruit and the dry profile, perfectly harmonising liveliness and expressive elegance.
