What kind of wine is it
Le Bois de Binson Extra Brut is the Champagne crafted by Eric Taillet, a pure expression of the Pinot Meunier grape variety. Produced according to the Traditional Method, it appears in the glass with a bright straw yellow colour, enlivened by a fine perlage. The bouquet reveals clear fruity notes, enhanced by pleasant tropical fruit nuances. On the palate, it is rounded, balanced and deep, with a remarkably persistent finish. Thanks to its structure, it enhances the savouriness of fish and shellfish dishes, and also pairs perfectly with cheeses and starters.
Where does it come from
The grapes are grown in six villages around Baslieux-sous-Châtillon, in the Marne Valley, a prime area for Champagne. The vineyards are rooted in marly, clay and sandy soils, geological matrices that favour a well-defined flavour profile. The raw material comes from vines over forty years old, cultivated using an organic and sustainable approach to preserve the local ecosystem. The parcel-based origin enhances the primary characteristics of the terroir, delivering pronounced aromatic clarity and consistent balance.
How is it produced
Production strictly follows the Traditional Method, with secondary fermentation in the bottle. To preserve the original qualities of the fruit, the winery operates with no filtration and without cold stabilisation. After the prise de mousse, the wine matures on the lees for 40 months, a crucial period to impart smoothness to the sip and a very fine texture to the bubbles. The result is an Extra Brut dosage with a structured and harmonious drinkability. To fully appreciate its character, a serving temperature of 6-8 °C is recommended.

The vineyard covers 5.70 hectares divided into 6 municipalities around Baslieux sous Chatillon. A charming location in the heart of the great "valley de la Marne" where the Pinot Meunier reigns supreme. There are also Chardonnay and Pinot Noir used for some Cuvée.
