What kind of wine it is
Enrico Serafino Zero Pas Dosé Late Disgorgement is a sparkling wine that enhances Pinot Noir through the precision of the Traditional Method. It appears a straw yellow colour with a fine and persistent perlage. On the nose, it reveals a broad bouquet, characterised by notes of linden blossom, honey, citrus and bread crust. On the palate, it displays a vigorous structure and a full body, finishing with an extremely long mineral aftertaste. Thanks to its purity, it is perfect for pairing with shellfish and lean fish, and also shows great versatility with vegetarian dishes and white meats.
Where it comes from
This wine originates in the Alta Langa area, among the hills of Piedmont. The vineyards are located in the municipalities of Mango, Loazzolo and Bubbio, at an altitude between four hundred and fifty and five hundred and fifty metres. The vines are rooted in clay-limestone soils, with exposures that ensure an ideal thermal balance. The adoption of sustainable viticulture allows for grapes with remarkable aromatic precision. These pedoclimatic characteristics are fundamental in giving the sip its typical gustatory tension.
How it is produced
Production begins with manual harvesting and a rigorous selection of the bunches. This is followed by pressing in an inert atmosphere aimed at extracting only the free-run must, preserving the integrity of the grape's primary aromas. After fermentation in steel and a period of rest with bâtonnage, the wine undergoes secondary fermentation in the bottle according to the Traditional Method. Aging on the lees for sixty months encourages the development of a complex aromatic profile. The process concludes with a late disgorgement, carried out by topping up the bottles exclusively with the same wine, thus maintaining the absolute absence of dosage.

Founded by Serafino Enrico, an entrepreneur and landowner, the winery soon became one of the most important in Piedmont and among the first to spread the region's classic wines throughout Italy and abroad. In addition to the classic Piedmontese wines of the area, first and foremost Roero, Arneis and Barbera, the company produces great Barolo and Barbaresco from grapes from the nearby Langhe, noble and elegant wines in which the Nebbiolo grape variety expresses its characteristics at its best. But Enrico Serafino's pride and joy is the selection signed 'Cantina Maestra', in which the red wines Pasiunà and Parduné stand out, the highest expression of excellence of the Roero territory, and the Metodo Classico Alta Langa DOC sparkling wines.
