Endrizzi Trento Brut is a refined sparkling wine made using the Traditional Method that embodies the winemaking essence of Trentino. Produced from a blend of grapes including Chardonnay and Pinot Noir, it stands out for its dry and gastronomic style. In the glass, it displays a pale straw colour with greenish highlights and a fine, persistent mousse. The aromatic profile is intense, with clear notes of green apple. On the palate, it is savoury, fresh and lively. Thanks to its excellent flavour tension, it is ideal as an aperitif and pairs with versatility with shellfish, seafood dishes, vegetarian recipes, white meats and mature cheeses.
Where it comes from
This sparkling wine originates from the small terraced vineyards of the Val di Cembra. The vines grow in mountainous settings, at altitudes between five hundred and six hundred and fifty metres. The mountain climate ensures a slow ripening that promotes deep flavour tension and marked freshness. The grapes partly come from the Pian di Castello vineyard, a rare plot surrounded by woods and cultivated using the Guyot system for over thirty years. This identity translates into a dry and vertical sip, faithfully reflecting the high and breezy areas of the Trento region, giving the wine its distinctive savouriness.
How it is produced
The production process begins with summer thinning of the bunches and continues with a rigorous manual harvest. The whole bunches undergo gentle pressing to avoid maceration, followed by the first fermentation carried out at low temperatures in temperature-controlled steel tanks. The prise de mousse follows the principles of the Traditional Method. The subsequent ageing on the lees for at least twenty-four months enriches the structure while preserving the wine’s original fragrance. Finally, a minimal dosage ensures that the natural characteristics of the terroir are expressed in the glass with absolute purity.
