Casa Maté Barolo Ginestra by Elio Grasso is a still red wine made from Nebbiolo grapes, an authentic expression of the Langhe. Where it comes from
The grapes are grown in the Ginestra subzone in Monforte d’Alba, a privileged hilly area that forms part of the Langhe’s scenic heritage. The vineyards, facing south at around three hundred metres above sea level, are rooted in medium-textured calcareous soils with a strong clay component, interspersed with marl and stratified sands. This unique pedoclimatic context gives the wine its typical depth. The cultivation of Nebbiolo in these lands is centuries old, consolidated in the nineteenth century thanks to the efforts of Cavour and the Marchesa di Barolo, historical figures who were instrumental in the birth of high-quality Barolo.
How it is produced
Production begins in autumn with a rigorous manual harvest of the bunches, selected from vines about forty years old trained using the Guyot system. The must ferments in stainless steel tanks at a controlled temperature, with daily pump-overs. After malolactic fermentation, maturation continues in Slavonian oak barrels. The total ageing process lasts at least thirty-eight months, eighteen of which are spent in contact with wood, and finally concludes with an almost year-long rest in the cellar, an essential stage to perfectly harmonise the wine’s entire aromatic range.

In the early 1980s we decided to go back to our origins as grape growers, well aware that our work did not stop at the end of the row of vines. We had no illusions that we were inventing anything: we merely wanted to comply with the best in the traditions and work of our predecessors, without any preconceived ideas.
