What kind of wine it is
Cuvée Ewa by Elena Walch is a still white wine with an intense straw yellow colour, enriched by golden reflections and a pleasant liveliness. It is created from a harmonious blend of Gewürztraminer, Chardonnay and Müller-Thurgau. On the nose, it opens with a delicate bouquet characterised by floral notes of rose petals, spicy herbal hints and pleasant mineral nuances. On the palate, it offers a fresh and youthful profile, revealing an elegant and juicy structure that balances citrus notes with a persistent finish. It is ideal for pairing with spicy Asian cuisine, white meats and vegetable risottos.
Where it comes from
The grapes for this wine come from the mountains surrounding Termeno and Caldaro, in Trentino-Alto Adige. The vineyards rest at an altitude between three hundred and four hundred metres, rooted in well-drained calcareous soils that ensure optimal growing conditions. The area enjoys a unique climate, where Mediterranean warmth during the day alternates with Alpine coolness in the evening. This marked temperature variation encourages aromatic development, giving the wine a clean character and perfect balance with its freshness on the palate.
How it is produced
The three grape varieties are vinified separately to enhance the characteristics of each, then combined into a refined blend in spring. After gentle pressing, only the Gewürztraminer undergoes a six-hour skin maceration, a crucial step to extract its distinctive aromatic components. The must ferments in stainless steel tanks at a controlled temperature. This is followed by a period of ageing on the lees for several months, which enriches the enveloping texture of the sip and preserves the clarity of the plum and fresh hazelnut notes.
