What kind of wine it is

Doyard presents a Blanc de Blancs Grand Cru capable of expressing the pure essence of Chardonnay. This wine reveals itself with a straw yellow colour and golden highlights, crossed by a fine and persistent perlage. On the nose, it weaves together fruity aromas and floral nuances, accompanied by clear notes of yeast that anticipate a fresh, dry sip with a very long finish. Its profound structure creates a perfect balance with dishes such as sushi, shellfish, fried fish and soft cheeses.

Where it comes from

The grapes are grown in the Champagne region, where the climate and geology shape wines of great character. In particular, the Chardonnay comes exclusively from the Grand Cru villages of Avize, Le Mesnil, Oger and Cramant. The identity of these terroirs is directly reflected in the aromatic precision and pronounced freshness of the cuvée. Careful selection of the plots results in a clear profile, where the minerality of the soils supports a dry and dynamic flavour structure.

How it is produced

Production follows the Traditional Method, starting with partial vinification of the must in barrels. The Champagne then undergoes malolactic fermentation, gaining greater harmony before the prise de mousse.
