Description
What kind of wine it is
Crémant d’Alsace La Griffe du Diable Brut by Dopff & Irion is a structured sparkling wine, made from Chardonnay grapes vinified according to the strict rules of the Traditional Method. In the glass, it displays a brilliant straw yellow colour with golden highlights, animated by a fine perlage. On the nose, it releases pleasant fruity aromas that anticipate a fresh and defined sip. Its dry style makes it ideal when served at a temperature of 6-8 °C to accompany delicious aperitifs, sushi, shellfish and lean fish, proving to be a perfect match also for goat’s cheeses and vegetable terrines.
Where it comes from
This sparkling wine originates in the elegant region of Alsace, an area renowned for the production of great wines. The Dopff & Irion estate is based in Riquewihr, a picturesque village where Chardonnay is cultivated. The winery’s connection with this land has played a decisive role in elevating the prestige of Crémant d’Alsace worldwide. This label carries the history of a family that has made the region famous, outlining the authentic profile of this sparkling wine.
How it is produced
Production faithfully follows the principles of the Traditional Method, involving careful refermentation to develop a persistent mousse. After white vinification of the Chardonnay, the wine matures patiently in oak barrels. This ageing imparts structure and greater complexity, while fully preserving the dryness characteristic of the Brut style. The process refines the fruity aromas and gives the wine a solid ageing potential, allowing it to evolve in the cellar and enrich its bouquet over a period of five to ten years.
