Where does it come from
This sparkling wine originates in the heart of the Alsace region, from vineyards protected by the Vosges hills and situated on the renowned Schoenenbourg slope. This location ensures a favourable climate for consistent and optimal grape ripening. The true richness of the terroir lies in the complex soil composition, characterised by alternating layers of limestone, clay and sandstone. This pronounced geological diversity gives the vines a distinctive local character, endowing the wine with a deep aromatic complexity and a structural balance capable of sustaining the natural freshness of the sip for a long time.
How is it produced
The creation of this Brut is based on a careful blending of selected grapes. The sparkling process strictly follows the Traditional Method, with secondary fermentation in the bottle and a slow maturation of over twenty-four months. This long period on the lees is essential to enrich the flavour profile with elegant toasted notes, ensuring a deep and dynamic sip. To enhance its qualities, a serving temperature between 6 and 8 °C is recommended, ideal for pairing with shellfish, salmon, baked fish and poultry.

At the end of the war, two of the biggest names in viticulture in Riquewihr, René Dopff and the widow Irion, joined forces to found Dopff & Irion.
