Description
What kind of wine it is
Valpolicella Ripasso Classico Superiore La Casetta by Domini Veneti is crafted from a meticulous blend of Corvina, Rondinella and Corvinone grapes. In the glass, it displays a deep ruby red hue with violet highlights, introducing an intense aromatic profile of cherry, red fruits and spicy notes. On the palate, it reveals a full and velvety texture, supported by well-integrated acidity, balanced tannins and subtle hints of dried fruit. Its robust structure makes it ideal for pairing with grilled meats, game dishes, braised meats and selections of mature cheeses.
Where it comes from
The roots of this red wine lie in the hillside vineyards of the Roselle locality, situated in the heart of the municipality of Negrar. In this prime area of the Valpolicella Classico zone, the vines grow on predominantly clay soils with significant limestone veins. The vines, trained in the double pergola system, benefit from an optimal microclimate for steady and consistent ripening. The interplay between the soil characteristics and a rigorous manual selection of the grape bunches gives the must a high concentration, resulting in the pronounced smoothness and depth typical of this label.
How it is produced
The winemaking process enhances the identity of the grapes through the Ripasso technique. After an initial fermentation in stainless steel with skin maceration and frequent punch-downs, the wine undergoes a second fermentation on the Amarone pomace, gaining roundness and structure. This stage is followed by malolactic fermentation and a completely natural settling without filtration, carried out exclusively through racking. Finally, a long ageing in barrels for 24 months stabilises the sensory profile, ensuring great balance and a persistently pleasant sip.
History and Curiosities
Born on the hills of Roselle, in Negrar, this wine embodies the excellence that Domini Veneti has passed down since 1933. The grapes, carefully hand-selected, are enhanced through the traditional Ripasso method on the Amarone pomace. This historic production technique, combined with natural stabilisation without filtration and 24 months of ageing in barrels, gives the wine remarkable structural richness. A glass with a full and velvety body, a satisfying sip, ideal with grilled meats, braised dishes and mature cheeses.

The spirit is the same as that of the visionary cooperative founded in 1933 by the seven businessmen from Verona, just as the very same principles guide our work on a daily basis today and inspire every new project: initiative, reciprocity and collaboration.
Generations that work side by side: this is the strength of Cantina Valpolicella Negrar. It is the same strength that has enabled us to stride through history and become the benchmark producer when it comes to Amarone, Ripasso and the technique of Appassimento.
Energy and creativity on the one hand; on the other, the wisdom that comes from the experience of many vintages, leading to a generational renewal that takes place while we work together. Read more
