What kind of wine it is
Valpolicella Classico Superiore by Domini Veneti is a still red wine with a defined character. This blend combines Corvina, Corvinone and Rondinella grapes. In the glass, it releases aromas of wild berries and hints of violet, enriched by balsamic notes and a spicy background of black pepper and liquorice. On the palate, it is lively, supported by a fine tannic structure. The sip is fresh and mineral, finishing with a persistent finale recalling medicinal herbs. It pairs ideally with traditional Veronese dishes, roasts and mature cheeses.
Where it comes from
It originates in the Marano di Valpolicella area, where the vines grow at an altitude of about 200-250 metres with south-east and south-west exposure. The soils have a silty-clay composition with calcareous veins, ideal for giving the wine savouriness and freshness. The name pays homage to the history of the area: Pruviniano was in fact the ancient name of this valley until 1177. Domini Veneti carefully selects local grapes to deliver a faithful and balanced expression of Classic Valpolicella.
How it is produced
The process begins at the end of September with a rigorous manual harvest. Once destemmed and crushed, the grapes ferment at a controlled temperature. The maceration phase lasts about ten days and involves regular punch-downs to delicately extract aromas and colour. This is followed by complete malolactic fermentation, essential for softening the wine's structure. The initial ageing in steel preserves the fragrance of the fruit, completed by a period of about twelve months resting in the bottle to achieve perfect balance.
