The Champagne Grand Cru Cote Chouilly Extra Brut produced by Domaine Les Monts Fournois is a Blanc de Blancs that expresses a character of utmost purity. Made from Chardonnay grapes using the Traditional Method, it reveals a straw yellow colour with golden highlights. The bouquet weaves together fruity, floral aromas and delicate pastry notes. On the palate, the dry structure typical of Extra Brut is enhanced by pronounced minerality and a fine mousse.
Where it comes from
The grapes come from Chouilly, in the renowned Côte des Blancs subregion, at the heart of the Champagne region. This terroir is home to prestigious Grand Cru vineyards, ensuring the wine has a clear and defined flavour profile. The vineyard management is entrusted to Domaine Les Monts Fournois, an artisanal récoltant-manipulant estate. Under the guidance of Juliette Alips, the estate fully enhances the qualities of Chardonnay grown in this area.
How it is produced
The production process strictly follows the rules of the Traditional Method. The secondary fermentation is followed by a slow ageing period of 53 months, an essential rest to integrate aromatic finesse and give breadth to the precise flavour profile. The choice of low dosage for this Extra Brut allows for a taut and well-defined character. The result is a wine capable of expressing varietal elegance, combining developed notes with a vivid persistence.

Originating from the renowned terroir of Chouilly, this Grand Cru Champagne from the Côte des Blancs reflects the exceptional craftsmanship of producer Juliette Alips. Created as a true Blanc de Blancs from only Chardonnay grapes, it boasts a patient 53-month maturation in the cellar, with disgorgement taking place in November 2024. The exclusive production of just 14,200 bottles highlights the artisanal nature of this traditional method, characterised by refined floral aromas and pastry notes. A masterpiece of elegance, with a fine perlage and pronounced minerality on the palate.

Graduated from oenology school in Beaune in 2020, Juliette already has a few vintages under her belt with acclaimed producers like Louis Latour in Bourgogne, G.D. Vajra in Piedmont, and closer to home, Roederer Estate where she spent more than a year learning from this iconic maison.
Now, with the help of her two cousins, she is starting this new adventure with Domaine Les Monts Fournois. Located in the north part of the Montagne de Reims, in the sub-area called La Grande Montagne, the Premier Cru Les Monts Fournois will be the focus of the domaine. Until the first vintage of that wine releases in a couple of years, the Domaine is offering a very small selection of vintage Grand Cru Champagnes. Using the extensive and strong family grower relationships developed by her cousins, Juliette is able to source tiny quantities of superb champagne from iconic vineyards to craft these exceptional wines.
We are pleased to present this inaugural offering of 3 grands crus: a 2015 Côte Grand Cru from the Côtes des Blancs, a 2016 Côte from the Oger Grand Cru in the Côtes des Blancs and a few, highly coveted cases of 2012 Montagne Grand Cru from the Montagne de Reims area. Read more
