The vines of Domaine Fourrey stretch over twenty-five hectares between the villages of Milly and Fleys, flanking both banks of the Serein river. Proximity to this watercourse plays a crucial role in defining the unique local microclimate, providing the grapes with optimal ripening conditions. The estate, now in its fourth generation, cultivates its land using organic and sustainable practices, aimed at preserving the ecosystem and enhancing the authentic identity of its place of origin.
How is it produced
The winemaking process is designed to respect the quality of the fruit and preserve the primary aromas. Every stage of the process aims to enhance the varietal typicity of the grape and the deep flavour tension typical of Chablis. The result is a white wine with a vibrant character, offering a sip with a clean and defined profile. Thanks to its strong sense of place, this label has significant ageing potential, estimated between five and ten years. To fully appreciate its texture and aromatic balance, it is best served chilled, between ten and twelve degrees Celsius.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.
The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.
Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region. Read more
