Description

What kind of wine it is

Domaine Fourrey Chablis Premier Cru Les Forneaux is a still white wine that embodies the essence of Burgundy. Made from Chardonnay, it stands out for its straw yellow colour enriched with golden highlights. On the nose, the bouquet blends elegant mineral notes with hints of fresh citrus and ripe yellow-fleshed fruit. On the palate, it reveals a perfect balance between a pleasant softness and a lively acidity that gives tension and dynamism to the sip. Its enveloping structure leads to a long and persistent finish, making it the ideal companion for oysters and shellfish, as well as delicate white meats such as veal or goat's cheese.

Where it comes from

This white originates in the heart of Burgundy, France. The vineyards take root in the historic Les Forneaux climat, an area where the particular soil and climate conditions allow for excellent quality. The Chablis Premier Cru designation identifies areas renowned for producing wines with a strong sense of identity. Domaine Fourrey manages the estate according to the principles of organic and sustainable agriculture. Under the guidance of winemaker Jean-Luc Fourrey, the winery is committed to fully enhancing the identity of Chablis, ensuring a vibrant texture and that distinct mineral sensation typical of the region.

How it is produced

The production process is designed to preserve the aromatic brilliance of the grapes. Vinification involves fermentation in stainless steel tanks, followed by malolactic fermentation. The wine then undergoes careful ageing on fine lees, an essential step to give volume and roundness to the structure while maintaining its natural freshness. Bottling usually takes place between seven and nine months after harvest. This white offers an optimal tasting experience if served between 10 and 12°C, and also boasts excellent ageing potential, allowing it to evolve elegantly in the cellar over the years.

History and Curiosities

In the heart of Burgundy, the exclusive Les Forneaux climat gives rise to a Chablis Premier Cru of rare elegance, made entirely from Chardonnay grapes. Under the expert guidance of winemaker Jean-Luc Fourrey, the estate embraces the principles of organic and sustainable viticulture, reflecting the authenticity of this prestigious French region. A true Grand Vin de Bourgogne, created to enhance the excellence of the local winemaking tradition.

Domaine Forrey is a family‑run estate located in the heart of the Chablis vineyard area, in Milly, a hamlet of Chablis just two kilometres away. The estate covers 25 hectares of vines and carries a legacy spanning four generations, passed down from father to son.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.

The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.

Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region.
