How it is produced
The production process is designed to preserve the aromatic brilliance of the grapes. Vinification involves fermentation in stainless steel tanks, followed by malolactic fermentation. The wine then undergoes careful ageing on fine lees, an essential step to give volume and roundness to the structure while maintaining its natural freshness. Bottling usually takes place between seven and nine months after harvest. This white offers an optimal tasting experience if served between 10 and 12°C, and also boasts excellent ageing potential, allowing it to evolve elegantly in the cellar over the years.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.
The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.
Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region. Read more
