Description

What kind of wine it is

The Chablis Premier Cru Mont de Milieu from Domaine Denis Race is a still white wine that expresses the authentic character of Burgundy. Made exclusively from Chardonnay grapes, it appears in the glass with a bright straw yellow colour. The bouquet combines mineral aromas with pleasant floral and fruity notes. On the palate, the Chardonnay reveals itself as full-bodied and juicy, offering a balanced sip and a savouriness that lingers long on the finish. Served at the ideal temperature of 10–12 °C, this structured wine pairs perfectly with fish dishes, white meats such as veal and poultry, and cheese selections.

Where it comes from

This Chablis Premier Cru originates in France, in the renowned Chablis area, specifically in the Mont de Milieu climat, known for its excellently exposed vineyards. The winery cultivates the vines following the principles of organic and sustainable certification. The roots sink into a marly and calcareous soil, rich in fossil deposits. This unique soil composition gives the wine a distinct mineral imprint and a well-defined territorial identity. Thanks to the characteristics of the terroir, the wine enjoys remarkable longevity, able to evolve favourably in the cellar for several years.

How it is produced

The process begins with a mechanical harvest of the grapes, followed by careful vinification. Fermentation in stainless steel at a controlled temperature is an essential choice to preserve the freshness and aromatic precision of the grape variety. This phase is followed by a carefully timed maturation period, designed to maintain a clean profile and naturally enhance the characteristics of the Chardonnay. This method achieves perfect structural balance. The result is an intense wine that embodies the unmistakable style of this prestigious area of Burgundy.

The Domaine of Denis Race is located in the heart of Chablis, in the northern part of Burgundy, among the most representative French wine-growing areas. Denis represents the fourth generation at the helm of the winery and his daughter Claire already follows the family tradition, helping her father both in the vineyard and in the cellar. The estate consists of 18 well-exposed hectares, with marly and calcareous soil, rich in fossil deposits and exclusively cultivated with chardonnay. The Race family follows all the stages of processing grapes, from mechanical harvesting, to fermentation in steel at controlled temperature, to maturation. Finally, the wine is bottled and marketed not only in France but also abroad. Read more
