Domaine Bott-Geyl cultivates its vineyards in Alsace according to the principles of organic and biodynamic agriculture. Under the guidance of Jean-Christophe Bott, the estate operates with total respect for the ecosystem, maintaining low yields and minimal intervention in the cellar. The fifteen hectares of estate vineyards are managed with a focus on sustainability, allowing the grapes to purely and faithfully reflect the region’s historic winemaking tradition.
How it is produced
After a careful manual harvest, vinification follows the strict rules of the Traditional Method. The wine is aged on the lees for twenty-four months before disgorgement, acquiring remarkable definition and complexity. The Extra Brut dosage gives it a taut, clean and vertical profile. This meticulous artisanal process is confirmed by excellent scores from international critics, particularly from prestigious names such as Decanter and James Suckling.
