What kind of wine is it
The Champagne Extra Brut from Diebolt Vallois is a Blanc de Blancs that enhances the Chardonnay from terroirs classified as Premier Cru. Crafted according to the Traditional Method, it features an extremely low sugar dosage. In the glass, this wine, with its straw yellow colour and golden highlights, releases aromas of white flowers, green apple and tropical fruits. On the palate, it reveals a rounded and creamy texture, guided by great finesse towards a persistent floral finish.
Where does it come from
This wine represents Champagne in its purest form, born from a rigorous selection of grapes grown in Cuis, Chouilly and Épernay, alongside the vineyards of Cramant. This renowned geographical area, classified as Premier Cru, provides the ideal conditions to define the distinctive character of this Blanc de Blancs. The care dedicated to these specific plots results in a limited production, aimed at preserving the profound identity of the terroir.
How is it produced
The production process begins with fermentation in temperature-controlled vats. The base is created from a blend of wines from different vintages, initiating the secondary fermentation using the Traditional Method. The Champagne matures with five years of ageing on the lees, a crucial step for developing a complex structure and a pleasant creamy mouthfeel. The cycle concludes with a perfectly calibrated Extra Brut dosage, ideal for maintaining the purity and tension of the fruit.

Diebolt-Vallois champagnes are the progeny of a united family:
Jacques Diebolt and Nadia Vallois are helped by their two children, Arnaud and Isabelle, who are taking an ever increasingly active part in the running of the estate.
The Diebolt family has lived in Cramant since the end of the 19th century, and the Vallois family has been cultivating vines in Cuis since the 15th Century. Although Jacques Diebolt started working with his grandfather, it was not until 1978 that the estate underwent a sea-change with the extension of the estate and the construction first of all of cellars, and then a winery.
