The Champagne Delouvin Nowack Sauvage Brut Nature is an organic Blanc de Noirs made from Pinot Meunier grapes. It appears a straw yellow colour with golden highlights and a fine perlage. On the nose, it reveals a layered bouquet of tropical fruit, citrus and toasted notes. Crafted using the Traditional Method, with no dosage, it offers a fresh sip on the palate, with a lingering flavour that renews itself with every taste.
Where does it come from
This wine originates in the heart of the Champagne region, in the village of Vandières. Here, in the Vallée de la Marne, the vineyards slope down towards the river, creating a microclimate ideal for growing Pinot Meunier. The Delouvin Nowack winery manages its own vineyards following the principles of organic farming. The agronomic work focuses on enhancing the variety, ensuring excellent ageing potential that reflects the identity of the area.
How is it produced
The vinification process enhances the purity of the grape variety through the prise de mousse using the Traditional Method. The long maturation on the lees for forty-eight months gives the structure remarkable depth. The choice of the Brut Nature version preserves its dry linearity. Served between 6 and 8 °C, it is perfect for enhancing raw fish dishes, pairing harmoniously with sushi, shellfish, white fish and fresh cheeses.
