What kind of wine is it

Champagne Fauve Brut Nature by Delouvin Nowack is a pure expression, created from a blend that combines Chardonnay with Pinot Meunier. Produced using the Traditional Method, it is distinguished by the complete absence of dosage. On the nose, it offers lively notes of yuzu and fresh apple, which evolve into delicate pastry aromas. On the palate, it is linear and chiselled, supported by a vibrant saline drive and a chalky minerality, making it ideal paired with oysters and sushi.

Where does it come from

The grapes come from Vandières, in the Vallée de la Marne, at the heart of Champagne. The vineyards, managed with organic and sustainable methods, benefit from optimal southern exposure. The vines sink their roots into soils characterised by exposed chalk, a distinctive element that gives the wine its pronounced mineral character. Delouvin Nowack operates as an independent winegrower, meticulously overseeing every stage of production to ensure an authentic expression of the terroir.

How is it produced

Production strictly follows the Traditional Method. The cuvée undergoes a long maturation of at least seventy-two months on the lees, an essential step that enriches the texture and complexity of the blend. The choice of the Brut Nature style, with no dosage sugars, preserves the saline tension and the original freshness of the fruit. The result is a pure sip, characterised by a notably persistent finish.

History and Curiosities

Fauve Brut Nature 2018 is the result of the expertise of the Delouvin Nowack family, independent winegrowers in Vandières. This cuvée combines the elegance of Chardonnay with the intensity of Pinot Meunier, using grapes grown according to organic and sustainable methods on soils characterised by outcropping chalk. Thanks to ageing for at least 72 months on the lees, the wine develops a deep and enveloping aromatic complexity. The complete absence of dosage ensures a pure and crystalline profile, offering a vibrant mineral tension that is capable of evolving beautifully in the cellar over the next 5-10 years.

Arriving in Champagne from Paris the first area you meet is the Vallée de la Marne, a beautiful valley characterized by beautiful vineyards that degrade towards the river, vineyards whose undisputed king is the Pinot Meunier. In one of the villages of the Vallée, Vandières, we meet Bertrand Delouvin, a very welcoming vigneron who dedicates his excellent work almost exclusively to Pinot Meunier.

The Delouvin, winemakers in these areas since the 1500s, have started marketing champagne since 1949; Mr Bertrand cultivates the 6 hectares of property (5 vines to Pinot Meunier and 1 to chardonnay for the vintage cuesée Extra Sélection) in a rigorous manner, personally carrying out all the operations of winemaking and analysis, to ensure the specificity of its champagne and the result they are very pleasant champagne, which meet the favor of many tasters thanks to the particularity of pure Pinot Meunier vinified in a simple way, without frills or excess.
