How it is produced
The winemaking process involves manual fermentation in small containers, an artisanal technique ideal for preserving the primary aromas of the grapes. The subsequent ageing continues for ten months in French oak barrels, enriching the flavour profile with gentle hints of toasted hazelnut and smoky vanilla, without ever overpowering the fruit. Capable of evolving in the bottle for five to ten years, this red wine is notable for its strong gastronomic vocation. It pairs perfectly with dishes based on duck, game, pork and cheese. For optimal tasting, it is recommended to decant for one hour and serve at a temperature between 16 and 18°C.

When this Russian River Valley Pinot Noir and Zinfandel Great were purchased by the scion of a prominent French wine company, the focus of the operation became less "mainstream," not more. Like Benziger, Deloach celebrates its organic and Biodynamic certified status and encourages visitors to learn more in its garden experience and tasting flights.
Owners Suzanne Hagins and Chris Condos are so committed to making wine only from certified organic grapes, they say so right on the label! It’s not as common as you might think. Both career winemakers, this husband and wife team have managed to put together a little garden oasis amid the apple trees of Sebastopol. They also pour organic cider, with wine fresh from the tap at their stylish tasting room.
