Description
What kind of wine it is
David Duband Bourgogne is a red wine that authentically expresses the elegance of Pinot Noir. This label, signed by David Duband, presents itself with an intense red colour, heralding an aromatic profile characterised by delicate floral notes of peony. On the palate, it reveals a velvety texture and soft tannins, blending spicy accents with pronounced minerality. Boasting an excellent capacity for ageing, it evolves beautifully over time. It is ideal if decanted for an hour and served slightly chilled, paired with cured meats, cheeses, and game dishes.
Where it comes from
The grapes destined for this label grow in Chevannes, in the picturesque region of Burgundy. The vineyards benefit from a favourable south-east exposure, ensuring optimal and balanced ripening of the bunches. The vines sink their roots into soils with a strong winemaking vocation, dominated by a matrix of silt and pebbles. This distinctive geological composition imparts a clean territorial imprint to the sip, giving the wine a profound mineral structure capable of balancing the natural softness of the grape variety.
How it is produced
The vinification process begins with a rigorous manual harvest of the bunches. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature for seventeen days, with punching down and pumping over to optimise aromatic extraction. After pressing and a two-week settling period, the wine undergoes a long maturation in barrels for fourteen months, followed by a further three months resting in tanks before concluding the cycle in the cellar. This careful management of timing guides a measured evolution, preserving the characteristic silky finish.
History and Curiosities
Originating from Chevannes, this Bourgogne Rouge AOC from Domaine Duband expresses the quintessence of Burgundy Pinot Noir. The grapes, grown on silt and pebble soils with south-east exposure, are hand-picked to ensure excellent quality. After a 17-day fermentation in stainless steel, the wine matures through meticulous ageing in barrels for 14 months. This artisanal care releases floral aromas of peony and soft tannins, offering a sip with a velvety texture and a pronounced minerality that embodies refined modern elegance.

His first wines placed him among the "modernists", looking for great concentrations in wines, but over the years his "hand" has evolved more and more, aimed at the result of elegant and sweet tannins. David works 17 hectares of vineyard, but half of the grapes are given to François Feuillet, owner of the vineyards, and therefore the maximum production is 85,000 bottles, for 75% of pinot noir.
This vine, with David, is expressed with an intense red color, with spicy notes where the minerality is perfectly fused with the tannins, always velvety and soft. This is possible thanks to the fulling and pumping-over which are done even 10 times during the weeks of maceration.
From the "small" Burgundy Pinot Noir, passing through the villages where the small nuances are already visible on the nose, up to the great Crus where the Terroir is the master with strong minerality, the young Duband proves skilled and capable in interpreting the fruits extraordinary of Burgundy, measuring itself as a prominent figure of the vignerons of the Côte d'Or.
