Description
What kind of wine it is
Damilano Barolo Raviole is a still red wine, organic and sustainable, an authentic expression of the Nebbiolo grape grown in Piedmont. This Barolo stands out for its broad aromatic profile that weaves together notes of violet with hints of cherry and wild strawberry. Visually, it displays a ruby red colour tending towards garnet, while on the palate it offers a full and harmonious sip. Its softness is balanced by a lively acidic freshness and fine, precise tannins. Thanks to its well-defined structure, this wine boasts an ageing potential estimated between ten and fifteen years.
Where it comes from
The grapes grow in the municipality of Grinzane Cavour, within the renowned Raviole subzone. The vineyard, facing south-west at three hundred metres above sea level, provides an ideal environment for the ripening of the grapes. The calcareous and alluvial soils, composed of sand, silt and clay, give the wine an elegant tannic texture and accentuate its fruity character. This territorial vocation is interpreted by Damilano, a historic Piedmontese winery that transforms the fruits of the vineyard into a label capable of achieving international recognition for excellence.
How it is produced
Production involves a rigorous selection of Nebbiolo, followed by a temperature-controlled fermentation lasting about twenty days. This technique is essential to preserve the clarity of the aromatic bouquet, keeping the floral and fruity components intact. To enhance the harmony on the palate, it is recommended to decant for one hour and serve at a temperature between 18 and 20°C. At the table, its enveloping nature and structural precision make it a perfect match for game dishes, red meats, cured meats and mature cheeses.
