Where it comes from
The grapes ripen in the heart of Salento, particularly in the vineyards of the municipality of Sava and in the areas between the provinces of Brindisi and Taranto. The vines grow on soils rich in iron oxides, resting on a base of occasionally exposed limestone rock. This specific composition ensures freshness and promotes optimal sugar concentration in the bunches, giving the wine a distinct mineral character. D’Addario’s production approach in the area allows for a structured wine expression, deeply rooted in the typical identity of the South.
How it is produced
Vinification involves a vigorous extraction of the fruit, essential to impart intensity and body to the sip. The wine then matures in medium-toasted French oak barrels, a fundamental step that defines the tannins and integrates the spicy notes. At the table, it pairs harmoniously with roast and braised meats, beef or pork stews, mature cheeses served with honey and even dark chocolate. To fully appreciate its structural breadth, it is recommended to decant for an hour and serve between 14 and 16 degrees Celsius; the wine boasts an ageing potential of up to fifteen years.
