Where it comes from

Vignalesta is produced in Sava, in the Salento area, a central zone for the Primitivo di Manduria denomination. The vine roots explore soils rich in iron oxides, lying on limestone rock that sometimes emerges at the surface. This geological base maintains the freshness of the plant and ensures a high sugar concentration in the grapes. The soil imparts an intense minerality to the wine, essential for balancing the body and depth of flavour, enhancing the typical wine characteristics of the Taranto province.

How it is produced

The processing of Primitivo grapes aims for a solid tannic structure and a clear aromatic definition. Maturation takes place through ageing in French oak barrels for about a year; the time in wood blends the fragrances of ripe fruit with spicy notes, giving a smooth texture. For optimal tasting, it is best served at a temperature between 16 and 18 degrees. It is also recommended to decant for one hour before pouring, to allow for proper oxygenation.
