How it is produced
The technical process begins with a skin maceration of the Negroamaro grapes for about six to eight hours, calculated with great precision to extract the right shade of colour. The free-run must then undergoes fermentation at a controlled temperature in stainless steel tanks, a necessary step to preserve the primary fruity aromas. Aging in stainless steel then continues for a period of three or four months. The complete absence of wood during maturation keeps the aromatic freshness intact and vibrant, delivering a tasting experience that is clean, precise and strongly defined on the palate.
