Where it comes from
The grapes originate from Salento, a region naturally suited to the cultivation of red grape varieties. The vineyards stretch between the provinces of Brindisi and Taranto, with roots sinking into calcareous soil tending towards clay with little stoniness. This specific geological matrix gives the wine its precise identity, characterising the sip with intense dark fruit and a clear and persistent spicy finish.
How it is produced
Production involves malolactic fermentation, a decisive step in defining the smoothness of the taste. This is followed by a resting period of about three or four months in medium-toasted French oak barrels. This brief passage in wood delicately integrates the aromatic profile, balancing the fruit with the spicy component. The result is a harmonious flavour profile, capable of beautifully accompanying meat ragù, structured first courses and tasty game-based dishes.
