What kind of wine it is
Coyam is an intense biodynamic and organic red from Emiliana, a true expression of the Colchagua Valley in Chile. This blend harmoniously combines Syrah, Carménère, Cabernet Sauvignon, Carignan, Grenache, Mourvèdre, Petit Verdot, Malbec and Tempranillo. It displays a deep ruby red colour, while the aromatic bouquet releases vivid notes of cassis and wild berries, enriched by hints of toasted black pepper. On the palate, it reveals a full-bodied structure, supported by soft, ripe tannins that lead to an exceptionally long finish.
Where it comes from
This wine originates from vineyards located in the fertile valleys of Maipo and Colchagua, Chile. Emiliana follows a strict sustainable agricultural philosophy, cultivating the land according to organic and biodynamic principles. Deliberately low yields per vine ensure an intense aromatic profile, allowing the grapes to develop great concentration. The origin in the Colchagua Valley enables the wine to fully express the natural ecosystem, maintaining a deep and respectful connection with the region's biodiversity.
How it is produced
Production involves a strictly manual harvest and careful selection of the best bunches. In the winery, the must is handled using a gentle gravity-flow system. After a brief cold maceration, alcoholic fermentation takes place in temperature-controlled steel tanks. This is followed by meticulous maturation in French and American oak barrels for twelve months. This skilful passage in wood enriches the blend, imparting a deep tannic softness and enhancing the overall elegance.
