Cocchi Alta Langa Totocorde Brut is an Alta Langa Metodo Classico wine produced by Giulio Cocchi, the result of an elegant blend that combines Pinot Noir and Chardonnay. On the nose, it reveals a broad and complex bouquet, characterised by notes of candied citrus and hints of fine pastry. On the palate, it is structured and substantial, with a vibrant sapidity and a citrus texture that leads to a fragrant finish with echoes of citron. Its decisive gustatory dynamics make it ideal for pairing with oysters, seafood risottos, salmon canapés, and battered fried foods.
Origin
This wine originates in Piedmont, in the heart of the Alta Langa territory, from vineyards situated above 250 metres in altitude on the right bank of the Tanaro river. The cool and sunny exposures allow for optimal ripening of the grapes, preserving their natural freshness. The white marly-limestone soils give the bunches a distinctive saline character and a solid potential for evolution. The combination of altitude, climate, and clonal selection defines a precise territorial identity, offering an expression with a marked gustatory tension.
How it is produced
Production begins with manual harvesting and soft pressing of the bunches. The first fermentation takes place in steel vats for about three weeks, followed by cold decanting. At the end of winter, the blend is created before the secondary fermentation according to the Metodo Classico. The subsequent maturation on the lees continues for at least 48 months in a cool, dark environment, giving the wine considerable depth. The cycle concludes with manual riddling on pupitres, cold disgorging, and a balanced dosage of liqueur d'expédition to define its refined Brut profile.

Giulio Cocchi completaCocchi’s original products and recipes was well-known during Belle Epoque and on the versatile scene of the Futurist period. Since 1978, Giulio Cocchi is owned and operated by the Bava Family, themselves highly renowned wine producers in Monferrato and Langhe. Today the winery still maintains its artisan character and follows the original recipes, formulated by Giulio Cocchi in 1891, to craft the distinctive wines that have made the Cocchi a cult name. Among the results of last 30 years, the defense of Barolo Chinato from forgetfulness and the relaunch of Vermouth di Torino category. Storico Vermouth di Torino since 2011 has been the driving force for the rebirth of the top-of-the-range Vermouth di Torino on the international scene. Not to be forgotten the attention for the sparkling wines, with the committment for the valorization of Alta Langa DOCG.
