What kind of wine it is
Cavallina is a still white wine crafted by Claudio Mariotto in Piedmont, a true expression of Derthona. Made exclusively from Timorasso grapes, it stands out for its clear, intense golden yellow colour. On the nose, it offers a distinct aromatic profile, characterised by hawthorn notes and chamomile intertwined with hints of peach and apricot. On the palate, it reveals an enveloping structure and excellent savoury balance, enriched by lively mineral nuances that lead to an elegant and persistent finish.
Where it comes from
This white wine originates from vineyards located between Vho and Sarezzano, cultivated at an altitude between 250 and 300 metres. The ventilated microclimate benefits from unique influences due to the proximity of the Apennines, the Po Valley and the sea. The vines sink their roots into calcareous and clayey soil, a fundamental element that promotes a clear sensory profile. The agronomic management follows strict environmental respect, excluding pesticides, herbicides and chemical fertilisers to enhance the authentic vocation of the territory.
How it is produced
Production begins at the end of September with a careful harvest, followed by gentle and slow pressing of the grapes. The spontaneous fermentation takes place thanks to indigenous yeasts at a controlled temperature, ensuring absolute gustatory cleanliness. The wine then matures for a year on the fine lees in steel tanks, accompanied by light bâtonnage to broaden its structure. The process concludes with bottle ageing of at least twelve months, a key stage to perfectly integrate the mineral backbone with the richness of the fruit.

Our vineyards enjoy a favourable microclimate as they are located close to the Apennines overlooking the Po Valley and influenced by the proximity of the sea, which is only 60 km away as the crow flies. We define our method of cultivation as common sense agriculture, without the use of pesticides, with pruning and leafing that respects the vines.
Claudio Mariotto in the early 1990s, together with a few other local winegrowers, believed in an abandoned indigenous vine like Timorasso to produce a great Piedmontese white wine for ageing.
Thanks to his daily life in contact with the vineyard, Claudio decided to give value to his work by bottling the wine he produced. Read more
