Description

What kind of wine it is

Sancerre Les Denisottes is a biodynamic white wine that precisely expresses the character of Sauvignon Blanc. Produced by Claude Riffault in Sancerre, it stands out for its fresh profile and pronounced mineral imprint. In the glass, it displays a bright pale gold hue, introducing a bouquet where notes of passion fruit, lime and pineapple intertwine with subtle spicy hints. On the palate, it reveals remarkable persistence, making it the ideal pairing to enhance dishes based on lean fish, sushi and cheese selections.

Where it comes from

This wine originates from the area of Sury-en-Vaux, located in the renowned Loire Valley. The vines, cultivated biodynamically using the Guyot system and aged between thirty-six and forty-five years, benefit from a favourable south-east exposure. Claude Riffault employs agricultural practices based on ploughing and grazing, combined with controlled ground cover between the rows. This careful approach protects the natural vitality of the soil and promotes the perfect ripening of the grapes.

How it is produced

The production process begins with a rigorous manual harvest, essential for maintaining the integrity of the grapes through careful selection. In the winery, the raw material undergoes a long and gentle pneumatic pressing. Alcoholic fermentation takes place in vats and barrels, allowing the liveliness of the fruit to be harmonised with a solid structure. The winemaking journey concludes with a nine-month maturation, which consolidates the wine's dynamic character. This meticulous process ensures the wine has an ageing potential ranging from five to ten years.

Vine cultivation is essential for obtaining fine and precise wines. As careful winegrowers, our role is to maintain the best possible balance between soil and plant according to the climate. The company's 13.5-hectare vineyard consists of 10.5 hectares of Sauvignon Blanc and 3 hectares of Pinot Noir in about 6 locations north of Sancerre.

The soil is ploughed and grazed. A vegetal cover, controlled between the rows, preserves the flora and activates soil life. The work of pruning, sprouting and trellising is rigorous.

This technique makes it possible to regulate production and aerate the vegetation and the grapes to achieve perfect ripeness and health. After manual harvesting, the sorting guarantees the respect and integrity of the grapes until pressing (White and Rosé) or in the vat (Red). Thus, vinification and ageing take place in a simple but precise manner.
