Where it comes from
Born in Champagne from the collaboration between Benoit Doussot and Bertrand Gautherot of Vouette & Sorbée, this project highlights the vineyards of Buxières-sur-Arce. The focus is on specific west-facing plots, historically less renowned but capable of delivering great expressions. The vines sink their roots into Kimmeridgian and Portlandian soils, geological formations that give the wine a pronounced mineral and savoury identity.
How it is produced
Production follows the strict steps of the Traditional Method, with a slow secondary fermentation in the bottle. To preserve the integrity of the fruit and the expression of the terroir, the wine is made without the addition of sugars, falling into the Brut Nature category with zero dosage. This choice ensures a dry, clean and vertical tasting experience, with a harmonious and long-lasting finish on the palate.
