Pecorino Fosso Cancelli by Ciavolich is a still white wine from Abruzzo made from Pecorino grapes. An expression of the Colline Pescaresi area, it displays a golden straw yellow colour. The bouquet offers aromas of peach, citron and yellow flowers, combined with hints of honey, mineral nuances and ginger. On the palate, it delivers a smooth and savoury sip, characterised by a pleasant contrast. The fresh citrus notes lead to a persistent finish, outlining a dynamic profile.
Where it comes from
This wine originates in Abruzzo, in the area of Loreto Aprutino. The vines are grown organically, using pergola and Guyot cordon systems. The loam-clay soils are directly reflected in the glass, imparting a clear saline note and a clean texture. The particular microclimate of the Colline Pescaresi promotes a perfect structural balance, where the pronounced savouriness harmoniously integrates with the wine's natural roundness.
How it is produced
The grapes are hand-harvested in small crates. After gentle pressing, the must is transferred to old French oak barrels for a slow spontaneous fermentation, started by a pied de cuve of indigenous yeasts. The process continues with ageing on fine lees inside Slavonian oak barrels. The decision to avoid filtration preserves the wine's authentic organoleptic richness, enhancing its material structure.
