What kind of wine it is
Cherchi Cannonau di Sardegna is a still red wine by Cherchi that enhances the identity of the Cannonau grape variety. To the eye, it presents a clear ruby colour with violet highlights. The aromatic bouquet reveals notes of ripe fruit, jam and blackberry, enriched by delicate hints of quince and plum. On the palate, it is dry and savoury, offering a great structure and a full sip. The balance is ensured by measured acidity and a slight tannic texture, leading to a harmonious and persistent finish.
Where it comes from
This red wine is born in Usini, in the heart of the Cannonau di Sardegna region. The vineyards stretch across hilly terrain at around two hundred metres above sea level, characterised by a calcareous matrix with clay fractions. These particular soil and climate conditions give the wine its distinctive character. The vines are trained on a vertical trellis with Guyot pruning to ensure balanced yields. The grapes are usually harvested in the third decade of September, once perfect phenolic ripeness has been reached.
How it is produced
After destemming and crushing, fermentation on the skins begins for a period of eight to ten days at a controlled temperature. Malolactic fermentation occurs spontaneously between autumn and the following spring. The wine then undergoes an ageing process of about six months, divided between steel tanks and wooden barrels. This period of rest imparts complexity to the structure before a very light filtration, which ensures an expressive and clear sensory profile.
