This Champagne originates from the vineyards of Chavot-Courcourt, located in the heart of the Champagne region. The vines are cultivated according to organic farming principles on soils characterised by a clay-limestone composition, with a northern exposure that helps maintain natural tension and elegance. The Chavost brand manages these lands with deep respect for the environment, creating a cuvée with a marked territorial identity that faithfully reflects the unique features of its cru of origin.
How it is produced
The production process begins with the manual harvesting of fully ripe grapes. Vinification takes place entirely in stainless steel tanks at a controlled temperature, through natural decantation without the use of enzymes or tannins. Alcoholic fermentation is spontaneous, activated exclusively by indigenous yeasts, followed by malolactic fermentation. Produced according to the Traditional Method, the wine is not subjected to fining, chaptalisation, or acidity corrections. The decision not to add sulphites during processing preserves the purity of the blend, offering a structured and unadulterated expression.
