This wine is produced in France, in the Champagne region, where Chavost has tended its vineyards since 1946. The vinification of the Chardonnay enhances the terroir, ensuring a perfect balance between freshness, roundness and a typical chalky sensation.
How it is produced
The Chardonnay grapes are hand-harvested at perfect ripeness. The production process faithfully follows the Traditional Method, with temperature-controlled stainless steel processing that does not involve clarification or enzyme decantation. Both fermentations occur spontaneously thanks to the action of indigenous yeasts, ensuring a pure and authentic aromatic profile. The wine is not acidified and the final disgorgement is carried out in pas dosé style, with no added sugars.

Since 1946, Chavost has been producing an exceptional organic Blanc de Blancs from Chardonnay grapes harvested at perfect ripeness. The vinification in steel takes place with indigenous yeasts, without any clarification. In this authentic classic method pas dosé, the process without added sulphites enhances the characteristics of the clay-limestone terroir. The bouquet, creamy and mineral, releases elegant notes of hawthorn and yellow fruit. On the palate it is fresh, rich and delicately chalky, with a harmonious finish, ideal for accompanying fine shellfish or cheeses with absolute refinement.
