Description
What kind of wine is it
Chavost Champagne Blanc D’Assemblage Brut Nature is a sparkling wine crafted using the Traditional Method. This wine is created from a meticulous blend of Chardonnay, Pinot Meunier and Pinot Noir. Its Brut Nature style results in a dry and refreshing sip, enhanced by an extremely fine perlage. The aromatic profile reveals clear notes of green apple, white peach, pear and cherry, supported by a hint of chalk and wet stone that delivers a vibrant and dynamic finish.
Where does it come from
This Champagne originates from the renowned French region, from vineyards characterised by a strict northern exposure. The vines take root in soil composed of limestone, chalk and clay, a trio essential for defining the linear character of the glass. The pronounced chalky nature of the soil imparts a distinct mineral imprint, ensuring a gustatory tension consistent with the non-dosage style. The pedoclimatic environment enhances freshness, offering a dry structure and absolute expressive clarity.
How is it produced
The production process begins with the manual harvest of fully ripe bunches. The must rests in temperature-controlled stainless steel tanks, settling naturally without the addition of sulphites. Alcoholic fermentation starts spontaneously thanks to the action of indigenous yeasts, followed by malolactic fermentation. The meticulous approach in the cellar excludes any addition of sugar, resulting in a zero dosage product that preserves all the integrity and precision of the original fruit.
History and Curiosities
Founded in 1946, Chavost expresses the organic soul of the region with this Blanc d’Assemblage. Produced in only 8,896 bottles, it is made from hand-picked grapes and spontaneous fermentations triggered by indigenous yeasts. The strict craftsmanship excludes any form of sugaring and the use of added sulphites, preserving the natural chalky identity of the soil. Vinified in steel at a controlled temperature, this authentic zero dosage caresses the palate with vibrant energy, offering a frank and uncompromising sip.
