Chateau Simone Palette Rosé is a still organic rosé that expresses the authentic soul of Provence and the prestigious Palette appellation. Obtained from a refined blend of Grenache, Mourvèdre, Cinsault, Carignan and Syrah, it presents in the glass with an intense ruby hue, enhanced by bright amber highlights. On the palate, it reveals a vigorous and full-bodied sip, capable of blending a significant structure with remarkable finesse, enriched by clear fruity notes that define its aromatic profile.
Provenance
This wine is born in the heart of Palette, Provence, from vines over fifty years old. The plants grow on north-facing slopes. The vineyards are rooted in gravelly and limestone soils, a geological composition that gives solidity to the structure of the wine. The interaction between this mineral matrix and the care of the vineyard allows for an elegant expression of the terroir.
How it is produced
Production begins with a manual harvest at full ripeness, followed by a meticulous selection of the bunches in the vineyard and in the cellar. After partial destemming, the grapes undergo soft pressing via a vertical hydraulic press, integrating a portion of juice obtained through the saignée method into the must to intensify its colour and body. Ageing takes place exclusively in oak barrels, where the wine rests in contact with the fine lees to develop greater complexity. The process ends with a natural decantation carried out by racking.

Located in the commune of Meyreuil and just four kilometres from Aix en Provence, the old bastide of the Grands Carmes d'Aix monks, now the Chateau Simone, has been in the hands of the Rougier family since 1830.
Old documents bear witness to the fact that vines have been cultivated here from time immemorial. The historic reputation of its wines has made Chateau Simone a prime example of the Provencal terroir.
