Description

What kind of wine it is

Chateau Pavie Saint Emilion Premier Grand Cru Classé A is a still red wine that embodies the purest essence of Bordeaux. This blend of Merlot, Cabernet Franc and Cabernet Sauvignon reveals itself in the glass with a deep ruby red hue. On the nose, it offers a complex bouquet, where wild berries elegantly intertwine with hints of liquorice and distinct spicy notes. On the palate, it displays a rich and full-bodied structure, supported by incisive and well-defined tannins. When served at 18-20°C, ideally after an hour of decanting, it pairs beautifully with roast meats, pork-based dishes and mature cheeses.

Where it comes from

The grapes for this renowned Saint Emilion come from hillside vineyards situated between 55 and 85 metres above sea level. The vines sink their roots into a distinctive clay-limestone soil, characterised by a very fine brown limestone component, essential for imparting aromatic precision and a solid tannic structure. The extraordinary concentration of fruit is ensured by old vines over forty years of age, cultivated according to strict principles of organic and sustainable farming, aimed at preserving the natural balance of the local ecosystem.

How it is produced

Vinification begins with a skin maceration of about three weeks in wooden vats at controlled temperature. Malolactic fermentation takes place directly in barrel, followed by ageing in new oak barrels for a period ranging from eighteen to thirty-two months. This meticulous care in the cellar shapes a deep and intense aromatic profile, giving the wine an estimated longevity of between fifteen and twenty-five years, during which it continues to evolve harmoniously.

History and Curiosities

The majestic Château Pavie 2021, Premier Grand Cru Classé A, originates from historic vineyards aged 43 years. The bespoke vinification, with maceration in wooden vats and a lengthy maturation in new oak, forges its profound structure. Acclaimed by critics, receiving among others the renowned 97 points from James Suckling, this exceptional jewel of Saint-Émilion embodies timeless refinement.

From this winery
A beautiful ensemble of sotne and flowers faces vineyard landscape. The entire space is organized around a monumental hall, and from the entrance the tone is set with a subtle measure of modern restraint and Bordeaux classicism.

The central area plays with space and natural light. Like the vines, the large glass façade captures the sun's rays, offering a magnificent view of the hillside vineyard. This is "the most beautiful spot in Saint-Emilion", according to some. "From one side you can see the village while the other offers a view of neighboring vineyards towards the Dordogne and the Entre-deux-Mers region beyond.
