Where it comes from
The grapes for this renowned Saint Emilion come from hillside vineyards situated between 55 and 85 metres above sea level. The vines sink their roots into a distinctive clay-limestone soil, characterised by a very fine brown limestone component, essential for imparting aromatic precision and a solid tannic structure. The extraordinary concentration of fruit is ensured by old vines over forty years of age, cultivated according to strict principles of organic and sustainable farming, aimed at preserving the natural balance of the local ecosystem.
How it is produced
Vinification begins with a skin maceration of about three weeks in wooden vats at controlled temperature. Malolactic fermentation takes place directly in barrel, followed by ageing in new oak barrels for a period ranging from eighteen to thirty-two months. This meticulous care in the cellar shapes a deep and intense aromatic profile, giving the wine an estimated longevity of between fifteen and twenty-five years, during which it continues to evolve harmoniously.
