This blend harmonises Chardonnay, Pinot Noir and Pinot Meunier, presenting an intense straw yellow colour and a fine, persistent perlage. On the nose, it releases notes of bread crust and delicate hints of honey. On the palate, it expresses a solid structure and a balanced profile, where crystalline consistency combines with marked savouriness, finishing on a pronounced mineral texture.

Where it comes from

This Champagne comes from the village of Merfy, located in the renowned Champagne region. The vines take root in chalky and sandy soils, enriched by Thanetian clays and soils from the Cuisian era. The unique geology of the area gives the grapes a clear profile, capable of combining breadth and gustatory tension. Careful selection of the bunches preserves the authentic identity of Merfy, giving the sip a characteristic mouth-watering bitterness and a vibrant sense of place.

How it is produced

The vinification enhances the raw material through spontaneous fermentation in stainless steel tanks, activated by indigenous yeasts. To maintain structural integrity and the balance between intensity and salinity, the wine is not filtered. The skilful blend includes the use of reserve wines, left to rest in vats and matured in barrels of various sizes. The process concludes with a carefully measured Extra Brut dosage, ideal for enhancing the acidic backbone and the natural density of the fruit.

In the 7th century, the winegrowers of the village of Merfy drew on the heritage of the Benedictine monks of Saint Thierry Abbey. Generation after generation, the Merfy vine-growers, together with the abbey, shaped the vine-growing landscapes of our hills, meticulously separating each plot according to its geological origins, soils, subsoils, etc. The names were later inscribed on village maps and became the 'lieu-dits', cultivating the vines that grow there today.

The family's wine-making tradition traces back to 1490, with Nicolas Taillet and Fiacre Taillet in 1540. In 1700, a second Fiacre Taillet, a learned winegrower, wrote his memoirs recounting his life and all the important events in the village, his family and his profession. The Chartogne-Taillet family continues this tradition and savoir-faire inherited from this winegrowing heritage.
